Federally inspected Premium Vancouver Island lamb, born and raised on my farm. These lambs are fed only milk, hay, grass and a limited amount of grain to balance their nutrition and to maintain health. No medications are used beyond those necessary to insure the health and well being of the animal. Should a lamb require health interventions such as antibiotics, strict protocols are maintained and these animals are not sold as prime lamb. Holly Hill Farm has been raising lamb on Vancouver Island for over 35 years and has recently moved to a new 28 acre farm in South Cedar, BC (just south of Nanaimo). Our lamb is uniquely tender, juicy and mildly flavored because the animals are processed at peak finish with a balance of fat, lean and bone between the ages of 12 and 16 weeks. Holly Hill Farm is currently following the guidelines laid out by the Canadian Sheep Federation “On Farm Food Safety Program” and will be seeking certification under this program as soon as it becomes economically possible in BC.

Lamb Burgers

Availability: Year Round

Lamb burger patties: Seasoned or plain (various seasoning options if pre-ordered) standard is salt, pepper and garlic. Gluten free with no binders or extenders added. Machine formed from CFIA inspected lamb and sheep meat (not fatty trim) Average weight per patty 5 oz but can be increased or decreased via special order. Wholesale packaging options 5, or 10 lbs boxes with peach paper separators and plastic box liners. For an additional cost patties can be cry-o-vaced in groups of 8 or 12 and boxed (minimum 10 lb order).

Lamb

Availability: Year Round

Freezer Lamb My predominantly Polled Dorset ewes lamb naturally lamb year round so the meat you buy in March will have the same flavor profile and excellent eating characteristics as the lamb you buy in Oct. Dorset ewes are excellent mothers who are heavy milkers (they are a very old breed historically used as “milk sheep” ) and the lambs grow very quickly. By selecting for good mothering, out of season lambing, and large mature body size I have insured the lambs will grow quickly without growth enhancers on a minimum of grain. At peak finish lambs average 55 to 70 lbs hanging weight. They are available wholesale as full or ˝ carcasses or can be cut and wrapped into retail cuts of your choice for an additional cost.
